Parsley-Salad with Blackberries

This quick and easy salad recipe is perfect in this warm weather. ;-)

Take a small cup of raw couscous and drench it with the juice from one lemon and half a glass of water. Add a sliced tomato with its juice, season with salt and pepper.

Get your food processor and blend half an onion, a handful of peppermint and three bunches of parsley.

Now combine everything and add some tasty olive oil. When serving, add fresh blackberries, our plant of the month August 2018 on .:-D
