Vegan sour cream?! Yes! Oh yes indeed!
Every baked potato needs it. And you need it too! ;-)
If you want some, the ingredient you need the most of is time. Vegan sour cream takes 48 hours to be done, but the preparation is super easy.
All you need are
260 gr. of Cashew
300 ml. of water
one bag of probiotic yogurt cultures
half a lemon
a pinch of salt.
Pour boiling water over the cashews and let them soak for an hour. Now drain them and blend them completely smooth in 300 ml. of water. Mix the probiotic cultures into this and leave it for 48 hours.
When it's done add a pinch of salt and the juice from half a lemon. Done. Sour cream.
Before I put this on my baked potato i added some garlic, some salt and pepper, a bit more lemon juice, a spring onion, some parsley and some sorrel.
There you go! You have to try it! It's really, really good!
